Smoked Baltic herrings

Baltic herring is quite forgotten food nowadays. I have to admit that preparing these small fishes is quite "dirty and smelly" and they are not as delicious as salmon. However, attracted by it's low price, I have discovered an easy way to prepare these bastards: use electric smoker to cook them crispy. With plenty of salt, dill and lemon, you'll get premium "fish fingers". Perhaps maximize the pleasure by dipping these to the sour creme?
